A fat's smoke point tells you when it starts visibly smoking — but the more important question is what happens chemically before that point. Seed oils are high in polyunsaturated fats that oxidise and form harmful compounds well below their listed smoke point. Beef tallow is mostly saturated and monounsaturated fat, which stays stable under prolonged heat.
